What do the five pins of a fan connector do?
I have a compaq proliant ml350 g1 and the system fan stopped working which stops it from booting properly. The fan plugs into a 5 pin connector on the motherboard, what do each of the pins do?
as I want to jump the pins to get it to start

don't do that - if the fan motor is OK, there is another very good reason for the motor not turning. you can pick up a spare fan on ebay for $10 - see link below.
5 pins is OTT for a fan, so this must be a compaq special - the latest high spec fan I bought has 3 connectors (+ - and PWM speed control) - I would guess the extra pair of leads are for an additional thermistor (temp sensor).
I found a link to download the service manual, which may help you.
I would guess that one of the pins is an "OK" signal to the mobo from the fan, and this is what has spiked your guns.
