In GSM you could use the whole 200 KHz as only one channel, and there are technologies that define a physical channel of 2 MHz, that could be divided on several logical channels or are completely assigned to one 'data call'.
Other technology (CDMA) define a only channel per sector of 1,5 MHz.
Channel per sectors is important, because a telephone mobile provider could have 10 MHz or 15 MHz of BW for the service, but they will use many antennas to cover geography and each antennas are divided in sectors. So you only have some BW available in each sector. With 200 KHz physical channel (GSM) you have 6 to 10 physical channel per sector, with CDMA you could establish only one physcial channel per sector at 1,5 MHz.
