Connect xbox to amp with hdmi?

I have:
Xbox 360 Arcade
Amp with only RCA inputs
HDMI cable
Toslink Optical cable
Turtlebeach X1 headset

At the moment I have my xbox hooked up with the following config:
xbox --> VGA 2xRCA male --> 2xRCA female to 3.5mm male -->3.5mm extension --> 3.5mm female to female --> Turtlebeach headset

For video I have:
xbox --> VGA --> VGA extension --> monitor

soon I'm hoping to get a small hd tv and move my xbox up to my room, and then hook it up with the amp there. I need to know if HDMI is better than VGA, and if it is, how to use HDMI but still connect the audio into my amp's RCA inputs in the best way qualitywise. I have some spare optical cable which I'm not sure would be any use, so any advice on that would be appreciated too.

This one's a toughy...
But I'd say that HDMI is equal in quality of picture compared to VGA.
HDMI is a digital signal, whereas VGA is analogue.

Some monitors / TV's only have HDMI... so there are adapters, but when adapters are used, then the quality degrades as the connection is not "Direct". So Let's say you get a TV with only HDMI input - then I'd use HDMI.
Now as far as your audio...
because your amp is only analogue: RCA only..... then you'd have to send your audio from your XBOX to your TV via HDMI [HDMI carries both sound and video] --- then send your audio from your TV to your amp via RCA. Most TVs have this audio out feature.
